- 1 cup packed baby spinach, chopped
- 1 scallion, finely chopped
- 2 tablespoon finely grated Parmesan
- 1 teaspoon grated lemon zest
- 2 tablespoon mayonnaise
- ¼ cup walnuts, chopped and toasted
- 2 tablespoon flat-leaf parsley, chopped
- 1 14-ounce can artichoke hearts, rinsed and patted dry
- 2 tablespoon lemon juice
- 2 tablespoon fresh mint, chopped
- Kosher salt and black pepper, to taste
- Sliced baguette or crackers, for serving
